KOT in Restaurants: Full Form, Format and How It Works (with Examples)

KOT stands for Kitchen Order Ticket: the slip or screen that tells the kitchen what to cook. Here is what goes on a KOT, a sample, KOT vs bill, and paper vs kitchen screen.

The KOT full form is Kitchen Order Ticket. It is the slip (or screen message) that tells the kitchen exactly what to cook, for which table, and in what quantity. The waiter or cashier creates it when an order is taken, and the kitchen cooks from it.

If you are opening a restaurant, cafe or cloud kitchen in India, the KOT is the first habit to get right. A clean KOT system means fewer wrong dishes, fewer arguments between the floor and the kitchen, and bills that always match what was served.

01What a KOT contains

A good KOT is short. The cook should understand it in two seconds, standing at a hot tawa. It usually has:

  • KOT number: a running number (KOT 145, 146…) so every order can be traced.
  • Table or order type: table number for dine-in, or "Takeaway" / "Delivery" with the customer's name.
  • Time: when the order was sent, so the kitchen knows what is waiting longest.
  • Items and quantity: dish names exactly as the kitchen knows them.
  • Notes: "less spicy", "no onion-garlic", "Jain", "extra gravy".
  • Waiter name: so the kitchen knows who to call when the food is ready.

Notice what is not on a KOT: prices, GST and the total. Those belong on the bill. The kitchen doesn't need them.

02A sample KOT

This is what a typical dine-in KOT looks like when printed on a 3-inch (80 mm) kitchen printer:

        KOT #148 Dine-in
  Table: 6 Waiter: Ravi
  17-10-2026 08:42 PM
  --------------------------------
  2 x Paneer Butter Masala
  4 x Butter Naan
  1 x Jeera Rice
       ** less spicy **
  1 x Sweet Lassi
  --------------------------------

When the same table orders more food later, a new KOT is created (for example KOT #152 for Table 6) with only the new items. All KOTs of that table are then added up into one bill at the end.

03KOT vs bill: what's the difference?

KOTBill (invoice)
Who it's forKitchenCustomer
When it's madeEvery time items are orderedOnce, when the customer pays
Prices and GSTNoYes (with CGST and SGST)
How many per tableOne or moreUsually one
Legal documentNo, internal onlyYes, needs GSTIN and FSSAI number

The golden rule: nothing leaves the kitchen without a KOT, and nothing is billed that wasn't on a KOT. This one rule stops most food theft and "forgot to bill" losses.

04Types of KOT

Dine-in KOT: linked to a table number. Several KOTs can belong to one table.

Takeaway KOT: marked "Parcel" so the kitchen packs it instead of plating it.

Delivery KOT: for your own delivery or Swiggy/Zomato orders, usually with the customer name or the aggregator's order ID.

Cancelled or modified KOT: when a customer changes their mind, a "cancel" KOT should be printed too, so the kitchen stops cooking. A good system also records who cancelled it and why.

05Paper KOT vs kitchen display screen

Most Indian restaurants print KOTs on a small thermal printer in the kitchen. Bigger or busier kitchens are moving to a kitchen display system (KDS): a screen or tablet on the wall that shows each order, how long it has been waiting, and lets the cook tap "ready".

  • Paper KOT is cheap (a printer costs ₹2,500 to ₹8,000), works without training and survives a power cut of the screen. But slips get lost, wet or unreadable.
  • Kitchen screen never loses an order, shows waiting time, and tells the waiter when food is ready. It needs a tablet or screen and a little training.

Many restaurants use both: a screen for the main kitchen and a printer for the tandoor or bar.

06How to set up a KOT system (step by step)

  1. Write your menu the kitchen's way. Short names the cooks already use: "PBM" can be fine on a KOT if everyone knows it.
  2. Decide your stations. If the tandoor, Chinese counter and main kitchen are separate, each should get only its own items.
  3. Buy a kitchen printer or a tablet. An 80 mm thermal printer is the usual choice for kitchens. See our guide on KOT printer prices in India.
  4. Use billing software that makes KOTs automatically. The waiter enters the order once; the KOT goes to the kitchen and the same items go to the bill.
  5. Train one rule: no KOT, no food.

07How KOT works in RestroGrow

In RestroGrow, the waiter takes the order on the phone app or at the counter. The KOT prints in the kitchen (USB, network or Bluetooth printer) or shows on the kitchen screen in the staff app, and the items are added to the table's running bill automatically. Orders from your QR table menu, your own ordering website and WhatsApp create KOTs the same way, so the kitchen sees every order in one place. You can try it in the app demo.

FAQ

What is the KOT full form in a hotel?

In hotels and restaurants, KOT means Kitchen Order Ticket. Some hotels also use BOT (Bar Order Ticket) for drinks sent to the bar.

Is a KOT the same as a bill?

No. A KOT goes to the kitchen and has no prices. The bill goes to the customer and shows prices, GST and the total.

Which printer is used for KOT?

Usually a thermal printer with 80 mm (3-inch) paper, connected by LAN, USB or Bluetooth. It needs no ink, only thermal paper rolls.

Can I run a KOT system without a printer?

Yes. A tablet or TV screen in the kitchen running kitchen display software can replace the printer completely.

Summary

KOT is short for Kitchen Order Ticket: the instruction from the floor to the kitchen. Keep it short, number every KOT, never put prices on it, and make sure everything served was on a KOT and everything on a KOT reaches the bill. Billing software that creates KOTs automatically makes this rule easy to follow every day.
